I wanted to bake Durian Fudge. It was beautiful baked but due to my carelessness, I spoiled the whole cake because I broke the sides skin. My grand daughter can't resist and ate some at the sides. It was delicious. I learned many years ago, must need practise to slide the sides carefully.
DURIAN FUDGE
A
8 egg yolks
8 oz optima flour
4 oz . H.K.flour
2 tbsp mashed durian
6 oz thick coconut milk
4 oz corn oil
1/2 tsp bicarbonate of soda
1/2 ts durian essence
B
8 egg whites
5 oz sugar
1/2 cream of tartar
Method:
1. Put ingredients A in a mixing bowl and mix well
2. Whisk egg white with sugar and cream of tartar till stiff. Place 1 into 2 and mix well.
3.; Bake in oven for 40-50 mins at 180'C . (tin-11"x11"x3")
Toppings:
A) 32 oz thin coconut milk
2 tbsp instant jelly
6 oz sugar
a pinch of salt
B) 7 oz thick coconut milk
5 thsp custard
8 oz. mashed durian
1. Boil (A) then remove from stove.
2. Add in blended (B) and cooks till thicken.
The cake without the fudge can be eaten on its own and it is delicious. I had to try another time , maybe a half the recipe with the fudge.
