This is the first time I bake muffins. Soft and delicious. The recipe is taken from Famous Cuisine.
CHEESE MUFFIN (makes about 8 cups)
Ingredients:
250g butter
170g caster sugar ( I find too sweet, should use less )
2 eggs
150g plain flour
1/4 tsp double action baking powder
1 tbsp poppy seed (which is not obtainable from Singapore)
1/4 tso vanilla powder.
50g shredded cheddar cheese
Method:
1. Beat butter and sugar until light and fluffy. Add in eggs, one a time,beating well after each addition.
2. Sift flour and Baking powder and add into butter misture with poppy seed and vanilla powder, stir well
3. Lastly add in shredded cheddar cheese, mix well.
4. Spoon the batter into muffin cups. Bake in preheated oven at 200' C for 15-20 minutes or until cooked.
