I baked Chocolate Walnut Cake. Very soft and delicious. Not easy to do because of the mixing . I realised that I underbake when I found that the surface was sticky.
CHOCOLATE WALNUT CAKE
Ingredients A:
180g butter, 9 egg yolks
40g caster sugar
5g vanilla essence
Ingredients B:
210g plain flour
1/2 tsp baking powder and sifted
Ingredients C:
9 egg whites
140g sugar
10g cream of tartar
Ingredients D:
100g chocolate chips
120g walnut, chopped and toasted
Method:
1. Beat butter and sugar on high speed until fluffy. Add in egg yolk and vanilla essence, beat on low speed until well mixed.
2. add ingredients B into batter and beat until well combined.
3. Use another mixing bowl to beat ingredients C until stiff and white.
4. Fold 1/4 of egg white mixture into batter, mix slowly by hand until well c0mbined and pour (fold lightly and do not over-mix, otherwise egg white will turn watery)
5. Add in ingredients D and mix well. Pour into a greased baking mould (12" square tin. Bake in a preheated over at 180' C for 40 minutes or until cooked. Serve.
