Delicious soft fruit cake
Twenty years ago, my friend Theresa gave me this recipe. She got it from one foreigner chef. When I baked this cake, they will finish it. I tried to keep for a few days, but couldn't
IVY'S FRUIT CAKE400gr. plain flour/cake flour Baked and skin it-1 1/2 cups metric walnuts.
400gr. butter 1 tsp cinnamon powder
400gr. or less black sugar 1 1/2 tsp bicarbonate of soda
8 eggs a pinch of salt.
1 tsp . vanilla
3/4 tsp tartar cream
Fruit mix - Big sister 375 gr. soak for 2 days with 1/2 cup brandy/rum
- Beat butter with black sugar, gradually put in egg yolk one at a time.
- Fruit mix & walnut (made smaller pieces) mix up some flour then scoop with the No. 1 and flour, mix well.
- Beat egg white with tartar till stiff then add this to other ingredients. mix well.
- Bake in greased tin for 170 C for 55 mins and low heat 1 50C for 10-15 mins. Can used 2 big loaf tins for this recipe.
